I doubt it would work with only two photos. PhotoScan works better with photos with lots of overlap. Many photos taken from all around the object. To do a live person, you would need some sort of multi-camera rig so that you could take all those photos at the same time. People move too much to get really good results taking one photo at a time. That's why rocks are so nice! If you are really interested in scanning a person, there are examples of scanning rigs that have been built to do the job. Just Google. No, with two images photogrammetry softwares are not able to align. You can try with around 100 photos, on someone laying very steady, isn´t going to be the best model because even breathing gives noise, but you could use it as a reference.
